Basic Information:

 

Foxes Bar-B-Que Team offers several options for your event. We can prepare everything from mouth watering slow smoked BRISKET (we cook it 16 hours!),  succulent slow smoked PULLED PORK (as a meat dish or for sandwiches) to WHOLE PIG!

Some of our customers prefer we do just the meat for their event with a “pot-luck” fare to round out the dinner.  Others like us to do all the work, adding items like COLESLAW, BAKED BEANS, CORN ON THE COB, ROLLS, etc.  CONTACT US with your phone number and other contact information and a convenient time to call.  We’ll get with you to discuss your needs.

We tend to stay in our region from Seattle, WA to Vancouver, Canada.  If you need us to travel further, contact us and let’s discuss it.

Prices for BBQ catering vary with the meat and/or sides you choose, as well as the number of guests.  Additionally, meat prices can vary wildly.   To give you an idea of the expense you’re looking at, see the sample selection list below  .  Contact us for a quote on your event!  We can customize your choices!

Foxes Bar-B-Que has catered events for as few as 20 to as many as 300.  References are available on request!  Events we have cater include COMPANY PICNICS, WEDDINGS, PRIVATE PARTIES, and ORGANIZATIONS (such as Shriners, Churches etc.).

All of our meat takes an extended amount of time to cook.  All of our cooking is REAL BBQ!  NOT GRILLING!  What does that mean?  We slow cook all of our bbq dishes by indirect heat for an extended period of time.  We use only charcoal and hard wood (usually cherry wood).

If one of the above options does not meet your need, please let us know exactly what you need and we will do our best to try to meet it.  We can provide lower cost options consisting of only one selection of meat from group A and fewer sides.

 

Drinks

Iced canned soft drinks can be provided at the cost of $0.75 per can.  Please let us know what number and variety you will require.  “Cold Drink” tubs will be placed in conspicuous locations for your guest’s convenience.

Serving Line:

We will supply and set up a buffet type line consisting of 2 – 3 (depending on options) portable tables, covered with disposable tablecloths.  Meat and hot vegetable dishes will

be served in heated chafing dishes.   We will supply all serving tongs, forks and spoons necessary.  During the serving period, we will maintain the food service in the serving

line.  The above prices are for a buffet style serving line.  We do not have staff to serve your guests, although we will be as helpful as we can possibly be.

Quanity:

We will calculate food for the number of guests you have supplied to us plus an estimated 10 to 15 percent overage at no extra charge.  While we have never run out of food, if you under estimate your crowd, it is entirely possible.  We can not take responsibility for too many guests, as this food takes many hours to prepare.  We will leave any leftovers with your designee packaged in 1 gallon zip top bags.  Please be prepared to store leftovers safely (ice chest stocked with ice, refrigerator etc.)

 

Meat Group Choices

 

A Group

 

Pulled Pork (guest choose with or without bun)

            Pork shoulder roast, slow smoked 12 hours with cherry wood until it is falling off

            bone.  Then it is hand pulled (shredded South Carolina style), and seasoned to

            to perfection with our own award winning BBQ rub seasoning.  This is one of our          most popular dishes.

 

Beef Brisket

            This fabulous smoked beef is the main stay dish of Southern BBQ!  We slow     cook this large (up to 15 pounds each) flavorful cut of beef for 16 full hours with cherry, apple and alder. We then carefully slice it cross grain to display the             beautiful smoke ring that develops during the cooking process.   Your guests      will rave about this one!

 

B Group

 

Pork Spare Ribs

            Here is a Staple of American BBQ!  Spare Ribs feature careful preparation with            our special award winning rub.  Then they are smoked to perfection for 4 hours,    sauced the last ½ hour, and then sliced into single bone servings.  BBQ doesn’t    get any better (or messier) than this.  Ribs are served with plenty of napkins.

 

Chicken Breasts and Thighs

            Chicken that is juicy and succulent.  We slow smoke marinated pieces 3-4 hours.          Near the end, we baste with our own home made BBQ sauce.  Unlike the other        meats, due to space and the difficulty level in preparation and cooking, we need to     have a good estimate of how many pieces of chicken to prepare.   Estimate 3/4             piece per guest + 15% overage, 50/50 white/ dark meats, assuming that some      guests will not choose chicken, and most guests will enjoy other meats also.

            If chicken is the only meat you have selected, the estimate will be 2 pieces per

            Guest + 15% overage.  Chicken is bone in and skin on.

 

C Group

 

Baby Back Pork Ribs

            These are a slightly smaller but meatier (and more expensive) rib than the Spare             Ribs. Considered by most to be the best of the rib choice.  Baby Back ribs are      hard to beat!

 

D Group

 

Whole Hog!

(For up to 200 People with a 50 person minimum.)

            This is better than a Hawaiian Luau!  Why you ask?  This hog is slow cooked for a full 24 hours with alder wood in our BBQ pit.  About an hour and a half before your meal is served, we bring the hog out of the pit, tastefully decorate in (how? – Depends on the mood – a nice pair of shorts, cute hat etc.).  Then it is laid out for display, whole, on a bed of lettuce.  This will be one of the most photographed memories at your event!  About 20 minutes before meal time, we remove the hide, pull and season the pork, and transfer to chafing dishes for your serving line. The whole hog is truly that special “event” at your event that will be talked about and remembered for years to come!

 

Sides

Carolina Red Cole Slaw

            This slaw is home made from scratch.  We start with only the freshest cabbage.  We make our slightly sweet, slightly vinegary, slightly nippy, creamy and wonderfully good dressing fresh before each event.

Baked Beans

            Ok, we admit it.  We don’t make these from scratch.  It’s hard to improve on brick oven baked beans. BUT WE DO.  We take these already tasty baked beans and slow cook them further in our smoker with bits of burnt end brisket (a southern treat) and / or pulled pork.

 

Corn on the Cob

(only available in season)

What else can we say?  The American BBQ traditional side dish.  Halved and boiled and served up hot with lots of butter and salt!

 

Killer Potato Salad

            This is a Foxes BBQ exclusive.  A secret family recipe that has been handed down through the generations.  Many have commented that this is without a doubt the VERY BEST potato salad that they have ever tasted.

 

Traditional Green Salad

            For the salad lover.  This is a commercially prepared green salad, served with

            your choice of 3 flavors of commercially prepared dressing.

 

Reserving Your Date

             Because our summers fill up so quickly, a 50% deposit is required when you

            decide to reserve the date for your event.  This deposit is fully refundable until

            30 days prior to the event.  At 30 days prior to the event, it is likely that we have

            already turned down other jobs, and unlikely that we could fill the void caused

            by a cancellation.  Therefore, your deposit becomes non-refundable at that time.

            Full payment for your event is due 1 week prior to the event.
